Ingredients:

1 cup cashews (salted or unsalted)

1 cup dates

½ cup raisins

2 Tbsp cocoa powder

2 tsp vanilla extract

  1. Soak cashews in water for 30-60 to soften and make easier to blend.
  2. Add cashews (drained), dates, raisins, cocoa powder and vanilla extract to food processor. Process until mixture is a thick dough-like consistency.
  3. Use cling wrap or wax paper to line the container you wish to place the mixture. An 8″ x 8″ pan or large tupperware work great!
  4. Pour mixture into container and press down firmly.
  5. Place in refrigerator for at least 1 hour.
  6. Remove from refrigerator and container to cut into whatever size/shape you like.

Depending on your taste, you can choose to switch our normal cocoa powder for dark cocoa powder for a richer taste or use another flavored extract to switch it up a bit.
